Keto Mocha Frappuccino

Hi there! I don’t know about you, but I just love iced coffee, especially this one, Mocha Frappuccino. I have been so busy today here in Oklahoma working on a rent house and tearing a wall down. Fun! Fun! I have really worked up an appetite! I tried this recipe yesterday, just to see how easy it was, and if it really tasted like the ones you buy at the coffee shops! Yes, it’s easy, and YES it taste just like the ones you buy! So today, I thought I would share this recipe to you for all you iced coffee lovers! Here it is!

Makes 1

Prep time 2 minutes

Ingredients:

2/3 cup strongly brewed coffee, chilled

1/4 cup unsweetened almond milk

1/4 cup heavy cream

1 cup ice

1 1/2 tablespoons cocoa powder

2 tablespoons swerve sweetener

Instructions:

Put all the ingredients in a small blender and blend until smooth, top with Almond Milk Redi Whip! Crumble toppings on if you would like!

Enjoy!

Keto Pepperoni Pizza Bites

Now, if you’re looking for something different to bake, and you love pepperoni pizza, than these will surely be a hit! These are delicious and make for a perfect snack in between meals. I made these for the first time last week and they were amazing. I snuck two in my husbands lunch bag, and at lunch he called me, wondering where those delicious pepperoni bites came from! Needless to say, my husband has requested that I make some more.

Here is the recipe:

Prep time: 10 minutes

cook time: 20 minutes

total time 30 minutes

Ingredients:

2 cups chopped or sliced pepperoni

4 ounces of cream cheese softened

1/3 cup coconut flour

1/2 teaspoon baking powder

1 teaspoon minced garlic

1 teaspoon Italian seasoning

3 large beaten eggs

1 1/4 cups shredded mozzarella (I used pepper jack cheese)

Instructions:

Preheat oven to 350 degrees

Combine cream cheese, pepperoni, shredded cheese and eggs until completely combined.

The start of the mixing up!

Add in remaining ingredients until well combined and chill 10 minutes allowing the flour time to absorb the moisture. *If after 10 minutes their is still a lot of moisture, chill another 10 minutes.

After sitting in the fridge for 10 minutes!

drop onto a greased baking sheet with a teaspoon

bake 18-20 minutes until golden brown.

In the oven baking!

After these cool, I like to place into a zip lock bag and store in refrigerator.

Finished product!

Garnish with marinara sauce if you’d like!

The Best Ever Keto Lemon Pie

Keto Lemon Pie with Pecan Crust

Today, I thought I would leave you all with a little treat to fix over the weekend. As for me, I am fixing to head out for the weekend to a rodeo. I can’t tell you how excited I am, if I am even at all, but sometimes just to get away from the day after day routines, is healthy for your soul.

I made this recipe, and honestly, I have only the best reviews! The easy to make pecan crust is the best I have ever tasted as far as crust goes, and now I think every pie should have a simple easy tasty crust like this.

Here is the recipe:

Prep time: 15 minutes

Cook time 10 minutes

Freeze time 1 hour

Total time 25 minutes

Servings 8

Calories 377 kcal

Ingredients

Crust:

1 cup chopped pecans

2 tablespoons butter, melted

1 tsp Swerv granulated (sugar)

For the Lemon Pie Filling:

8 oz cream cheese, softened

1 1/2 cups heavy whipping cream

1 teaspoon lemon zest

1/4 cup fresh lemon juice

2/3 cup Swerve confections (powdered sugar)

1 teaspoon vanilla

Instructions:

For the crust:

Preheat oven to 350 degrees. Crush pecans finely. I use a mini chopper

Add butter and Swerve granular (sugar) to crushed pecans and mix thoroughly.

Grease a pie pan then add crust mixture.

Grease the back of a spoon and use it to carefully smooth the pecan mixture in the bottom of the pie pan and up the sides.

Bake for 10 minutes and allow to cool.

For the pie filling:

In a large bowl, beat the heavy whipping cream until it forms stiff peaks.

Add the softened cream cheese, Swerve Confectioners (powdered sugar), and vanilla to the heavy whipping cream and beat on a medium speed until the mixture is smooth.

Add lemon juice and lemon zest then beat again. You can use more or less, depending on how strong you want the lemon to taste.

Pour filling mixture into pecan crust and freeze for 1-2 hours before serving.

You may store pie in fridge and pop in the freezer for about an hour or two prior to serving.
